Alpha-gal syndrome is a potentially serious allergic condition triggered by the bite of the Lone Star tick. It causes the immune system to produce IgE antibodies against galactose-alpha-1,3-galactose, a sugar molecule found in most mammalian meat and products. Reactions typically occur 3 to 6 hours after eating red meat, pork, or dairy, making it difficult to identify without testing.
